WebThe less cooking the better health-wise, heat destroys vitamin C and contact with water leaches it out. Which is fine if it leaches into a soup where you eat the water, but not for a boil where you dump it out. A quick steam is probably the least destructive way to cook it. But tbh nothing tastes better than a saute.
